Clean evaporator and condensing coils

Use soap and water to clean your equipment’s evaporator and condensing coils once a month. According to QSR Magazine, while there are coil-cleaner solutions available, “many are corrosive and can be expensive.” Be sure that when you’re cleaning the condenser coils, you’re scrubbing up and down, not side to side.

Wipe down fan blades and motor

You should also clean your machine’s fan blades and motor every 30 days. Food Service Warehouse explains that this should be done “with a soft cloth run over both the motor and the fan blades.” If you think a more thorough clean is necessary, be sure to cover the motor to avoid water damage.

Maintain proper temperatures 

Additionally, it’s important to keep your refrigeration unit at a safe temperature to prevent bacterial growth. “If proper sanitation and temperatures are not maintained, microorganisms can grow, affecting the safety and quality of the food products sold in the case,” advises Food Quality magazine.
